Executive Chef, The Twelve Apostles Hotel and Spa

 

I joined The Twelve Apostles Hotel and Spa as Executive Sous Chef in November 2012 and i was promoted to Executive Chef in September 2013. A graduate of the 1000 Hills Chefs School in Durban, my work experience includes positions held at the five-star Relais & Châteaux properties Kurland Hotel and Tsala Treetop Lodge, and the Cape Royale Hotel where he was Sous Chef at Bistro 1800°.

I have been fortunate to compete in several high profile cooking competitions, winning ‘Junior Chef of the Year’ at the Unilever Food Solutions and placing second in the prestigious Sunday Times ‘Young Chef of the Year’ competition. My contemporary South African menu is all about creating lasting memories for guests who experience the magical setting of the Azure Restaurant.

Together with Kevin Joseph, Executive Chef at our sister hotel The Oyster Box, I am delighted to have the opportunity to create the menus for Xigera. We work with our talented team to combine exquisite food, fresh ingredients, adventurous local dishes and locally-sourced sustainable produce.
